Cookie Wednesday: Moon Pie

Since we have one last Wednesday before the diet season begins I thought I would make something sinfully delicious for Cookie Wednesday.  There are a few steps to the crust and it will make some dirty dishes, but I promise the steps are not too difficult and the mess is so worth every delicious bite! 

Crust:

Preheat oven to 400.

1 1/4 c. water
1/2 c. plus 2 Tbl. Butter

Bring to a boil in a sauce pan.  Then add:
1 1/4 c. flour (I add 1/2 c. then stir until it is smooth using a wire whisk.  Then add the remainder stirring with a large spoon.)


Once a ball forms put the ball into a mixing bowl and allow to cool.  Once it has cooled to room temperature add:
5 eggs, one at a time stirring with a wire whisk or electirc mixer on a low setting until the egg is fully mixed in.  

Spread crust on a greased baking sheet.  It will be very thin in some spots. Bake for 30 minutes.  DO NOT OPEN THE OVEN!  Bubbles will form in crust making it look like the surface of the moon.  Once baked, allow to cool completely.


2nd Layer:

8 oz cream cheese, room temperature
3 1/2 c. milk
Two 3 oz. packages of instant milk chocolate, vanilla, or banana pudding (your preference)

Mix together until smooth.  Spread over crust.  

Top with:
sweetened whipped topping
drizzle with chocolate syrup
and sprinkle sliced almonds over the top
