Santa Whoopie Pies

Only 3 more sleeps 'til Santa comes!  Here is a simple, recipe that would look just adorable on a plate next to a big glass of milk for Santa.  Don't forget a carrot or two for the reindeer. 

*These cookies can easily be prepare the day before by simple wrapping the prepared cookie individually in plastic wrap and storing in a large zip tight freezer bag in your refrigerator. 

Santa Whoopie Pies
 I have 2 options for making these cookies.  I prefer a lighter chocolate flavor so I like the first one best, but my husband thinks the second makes a better cookie.  It's just a matter of person preference and what you have in the pantry.

1 box of Devil's food cake mix and 1 box of white cake mix
4 eggs
2/3 cup vegetable oil
or 
2 boxes Devil's Food cake mix, if you want a richer cookie
4 eggs
2/3 cup vegetable oil
Filling:
1 (8ounce) package cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
2 teaspoons vanilla
Christmas colored sprinkles or jimmies for decoration
Preheat oven to 350.  
Mix cake mix with oil and eggs.  The dough will be rather firm.  Roll dough into1 inch balls and place on a parchment paper lined baking sheet.  Gently press the dough out a bit then bake for 8-10 minutes.  When the cookies are finished baking let them rest on the baking sheet for a couple of minutes before transferring them to a wire rack to finish cooling.

Once the cookies are at room temperature prepare filling by first creaming the butter and cream cheese until completely blended.  Slowly add the powdered sugar.  Then add the vanilla extract.  
Spread the underside of one cookie with the filling and then sandwich it with the bottom of a second cookie.  Gently press the cookies together.  Roll the cookie in the jimmies or sprinkles.  Makes 2 dozen completed pies.
